Easy As Can Be Coconut Pie (Gluten Free And Sugar Free)


Does your family have trouble agreeing on the types of food they like? It can be hard planning meals when everyone wants something different.

My family loves desserts, but usually we all like different things. Dad likes anything with coconut and pies are his favorite dessert. I love cookies and cakes and any kind of chocolate dessert. Mom likes cakes and fruit based desserts. It is a challenge finding desserts that we all like, but this Easy As Can Be Coconut Pie is one that is so delicious we all loved it.

True to it's name, this recipe is as simple as mixing a few ingredients, pouring it in a pan, and baking it for a moist and tasty coconut pie. If you are not on a gluten free diet, try the recipe using regular Bisquick. It is cheaper and probably an ingredient you already have in your pantry.


Easy As Can Be Coconut Pie
Gluten Free And Sugar Free

Printable Recipe

3 eggs
3/4 cup sugar substitute
1/2 cup Gluten Free Bisquick
1/4 cup butter, melted
1/2 teaspoon almond extract
1 teaspoon vanilla extract
1 cup shredded coconut
1-3/4 cups half and half

1. Preheat oven to 350. Grease a 9 in. glass pie plate with shortening or cooking spray.
 
 
2. Place all ingredients in a large bowl and mix until very well blended. Pour into pie plate.
 
 
 
3. Bake  at 350 for 45 min. or until pie turns golden brown and a toothpick inserted comes out clean. Store leftovers in refrigerator.

Half and half is half milk and half cream. It is sold in small cartons in the dairy case, usually near the milk or coffee creamers.
