As most of us are trying to stretch our dollars these days, it is good to
have a few recipes to prepare that are filling, but easy on the pocketbook. This
is a dish my Mom calls "The Saved Our Lives Casserole". When she and my Dad
married at age 19, money was very tight. She had never cooked before getting
married, but quickly learned to put together nice meals for very little
cost.
Mom says they had this dish at least once a week with leftovers for another meal. You would think they would never want to eat this again, but even after being married 47 years, they still have it occasionally.
Even if you don't need to scrimp and save like my parents did back then,
try this and see if you don't love it too.

Pork
and Vegetable Casserole
Includes Gluten Free Version
1/2 pound baby carrots
2 large potatoes (peeled and cubed)
1 large onion (cubed)
1/4 cup uncooked elbow macaroni
1 (14.75 ounce) can cream of mushroom soup
Half And Half -OR- 2% milk (fill
cream of mushroom can)
2 tablespoons olive oil
1 tablespoon dried thyme
1 tablespoon ground sage
salt and pepper to taste
1. Preheat oven to 375.
2. In a skillet, heat olive oil, then brown pork chops to a crusty golden brown.
3. While the meat is browning, prepare the vegetables and place the macaroni and vegetables in a casserole dish. Sprinkle with sage, thyme, salt and pepper. When the meat is brown, remove from skillet and place on top of vegetables in the casserole dish.
4. Mix soup and milk in a small bowl. Pour over the vegetables and pork.
5. Bake about an hour in a 375 degree oven. Check in 30 minutes. If vegetables and macaroni have absorbed too much liquid, a small amount of milk may be added.

I will definitely be giving this recipe a try! My DH loves pork and I am always looking for new (easy) ways to fix it. I don't know why I haven't done something like this before, as I have made similar dishes with bnls chicken breasts, and pork is, after all, the "other white meat"!
